Strawberry Cream Cookies

These are SCRUMPTIOUS!  What is better than cream cheese and a good soft cookie combine!!  Be careful, you probably won’t be able to eat just one!!

How to make Strawberry Cream Cookies

What you need:

1 cup of butter, softened

1 package (3 ounces) of cream cheese, softened

1 cup of sugar

1 egg yolk

3 teaspoons of vanilla extract

2 ½ cups all-purpose flour

seedless strawberry jam

What to do:

In a large bowl, cream the butter, cream cheese and sugar until light and fluffy.  Beat in egg yolk and vanilla.  Add flour and mix well.  Cover and refrigerate for 1 hour or until easy to handle.

Shape dough into 1 inch balls.  Place 2 inches apart on ungreased baking sheets (I like to line them with parchment paper).  Using the end of a wooden spoon handle (or clean finger), make ½ inch deep indentation in the center of each ball (see picture); fill with jam.

Bake at 350° for 10-12 minutes or until set.

Remove to wire racks and cool.
